The Meat Ingredient for Chicken Nuggets

The video below shows one function of Food Processing, that is to add value to less valuable raw materials. The cheap or almost unusable materials will become very pleasing if food processing is applied. The methods for making chicken nuggets can be found here. The ingredients are the following:

Raw materials: (calculated for 5 kg batch)
95.00 % Chicken meat, boneless 4.750 kg
5.00 % Chicken skin (from breast) 0.250 kg

If we are going to follow the rules: we remove all meat, discard all the bones and measure five percent chicken skin. This method suits well for home processing but not for business. All chicken parts readily sold, chicken breast and thigh as the most expensive, intestinal organs, feet, wings, neck and even the blood.

Chicken neck, blood, intestine and feet are often sold as barbecue, isaw / inihaw.

In commercial point of view, the raw materials for chicken nuggets are chicken skins and leftover meat from chicken bone including tendon and ligaments. Why would we turn a delicious chicken drumstick to nuggets? or a breast to nuggets? Those parts are salable and expensive at their current state.

So the next time you buy chicken nuggets, keep in mind that it composed of skin, tendons, ligaments and other part that you hate the most like ribs.
