Kale

She brought home this unfamiliar leafy vegetable. As I thought, she bought it because of someone convincing her it is not only good tasting but great for the health too.

The makeup is like pechay Baguio but the color is as dark as brocolli. It smells like and literally tastes like grass with bitter and spicy notes. I felt nostalgic the days we used to play cows, chewing grasses as if we were real ruminants.

She made a smoothy but then realized she could not drink it. The taste was too strong for her taste buds. Then, diluted it with water and added a bit of sugar. It became more palatable but the strong grassy taste was still there.

After a day, the smoothie taste better. I am starting to enjoy it, I think. There might be some kind of reaction that help improve flavor. Or, maybe, my taste buds is getting acquainted with it.

Web results say it is indeed nutritious. Full packed with health benefits that I will not rewrite here. However, no article said it taste delicious. This is no news. Healthy vegetables are noted  for their bland to unpleasant taste. Bitter gourd, radish, mustard, lettuce and pechay are examples.

It is called kale. It belongs to cabbage family. A popular vegetable that was recently introduced to me.

Pancit Canton with Kalabasa, Carrots and Cabbage

Ingredients:

125 grams pancit canton
1 cup kalabasa, sliced
1 cup carrot, sliced
1 cup cabbage, sliced
1 cup togue
1 cup chicken meat, sliced
2 heads onion, chopped
4 cloves garlic, minced
1 tsp ground pepper
soy sauce and fish sauce to taste

Cooking Preparations:

1) Wash all vegetable ingredients. Cut to desired sizes.

2) Boil chicken meat in a cup of water for fifteen minutes. Let cool. Cut. Save the stock for later.

3) Saute garlic and onion until golden brown. Add chicken meat. Mix. Add vegetables. Simmer for three minutes. Set aside.

4) In a separate pan, boil the chicken stock. Add ground pepper,soy sauce and fish sauce to taste. Add pancit canton. Continue boiling until tender.

5) Arrange pancit canton in a platter and top the sauteed vegetables. Serve.

The KFC Coleslaw Salad

Not sure what the vegetables are composed of. They were chopped to small pieces. Perhaps a pure cabbage, not sure. The sour taste of mayonnaise is masking the veggie flavor. It should be a cabbage technically. By definition, coleslaw is a shredded cabbage with mayonnaise or buttermilk.

It was reduced to small pieces to fit in a small disposable canister. Consumers are going to chew it anyway. Minute sizes may not matter.

It has no appeal I think. Serving of whole cabbage and lettuce leaves with separate sauce is the best.

Eating The Raw Cabbage As Salad

Guess what was the purpose of these cabbage slices! These prepared veggies were intended for cooking sopas and pancit bihon.  However almost  1/5 of it was gone before cooking commenced. My sister, brother and I love eating raw cabbage. Only 1/5 will be left for the dish if left unchecked. Monstrous mouth gonna eat them rapidly.

I thought it was intended only for vegetable dish, cannot be eaten raw. Then my big brother told me it taste good when eaten raw. Indeed and the taste was slightly bitter but the crunchiness make it very enjoyable.

Big brother also told me that lettuce taste better than cabbage. I disagreed cause lettuce is more bitter and less crunchy. Maybe lettuce is more nutritious – like the very bitter ampalaya.

From the on, I always grab a slice of cabbage. I often provide mayonnaise as dipping. Ketchup is good too.

Do you also eat raw cabbage as salad? Perhaps!

Cabbage is the main ingredient of coleslaw. Together with carrots but often omitted for cost-cutting purposes. The  popular burger stand, Minute Burger, is offering very affordable buy-one-take one burger. There is a catch though. Coleslaw is not included. You need to shed extra pesos for the tiny cabbage and carrot slices.

Some ingredients that goes well with cabbage salad are:

cashew nuts
lettuce
crunchy ripe tomatoes
sesame
pasta
toasted ramen or the instant noodles (not cooked)
almonds
minced onions
quail eggs
table or salted egg
rare ripe mangoes
pili nuts
peanuts
carrots
mayonnaise
ketchup

In short, any edible ingredient that will suit your taste but can be added to cabbage. The limit is your imagination.

A Worm on Fruits and Vegetables Can Save Lives!

My father is a farmer, planting different crops such as mango, santol, banana, ampalaya and pechay. He starts by cultivating the soil . Remove all weeds that might compete with the crop for soil water and nutrients. Burn the soil to kill microorganisms, nematodes and other pests.  He chooses the best seed possible. During the crop growth, He sprays pesticides to prevent insect infestation. Apply commercial fertilizer for maximum harvest volume.

Commercial farming involves more extensive practices. Application of pesticides and fertilizers  is done on regular basis. This results in good  harvest, produce free from insect bites, worms and lesions.  Most of end users choose good quality fruit and vegetables. We don’t want fruits with holes, pechay with insect cuts or mango with rusts. How many of us are aware that these good looking goods are product of heavy commercial pesticides and fertilizers? How many of us know that  vegetables we eat might bring us diseases or even bring us to death?

What will you do if you see a small worm on a head of cabbage? Are you going throw it away ? Or , are you going to remove the worm and continue cooking it? If I am on your situation, I am going to remove the worm and continue cooking my head of cabbage. What is my reason behind?

How did the worm survive on head of cabbage? This means that farmer who grew the cabbage did not spray any chemicals  on his farm. The worm survived because the cabbage is free from any poisonous chemicals. We can conclude that if the worm survived eating the cabbage the more a human will survive eating the same cabbage. Any violent reactions?

Dirt brought by insects to fruits can easily be removed by cutting off the damaged portion or by washing it thoroughly in running water. On the other hand, formalin sprayed on vegetables cannot be easily removed by washing. This formalin as well as other chemicals might penetrate the inside flesh of vegetables .  Removing chemical residues from this vegetables might entail throwing it whole.

Eating contaminated fruits and vegetables might not harm us. But repeated consumption might concentrate harmful chemicals in our body and injure us later. Now! Are you still afraid of worms?
