Ten years ago, I had a taste of this appetizer recipe somewhere in the province of Laguna. That time, we conducted training regarding indigenous vegetable processing. One of this was “Pako” (fern leaves). The taste was so good!
Paco/Pako leaves (fern) is a indigenous vegetables that can be found in rivers and other fresh water bodies. It is reach in fiber, vitamin B and minerals. I prepared a pako salad and I want to share with you the short recipe.
2 cups fern leaves
2 tomatoes, sliced
1 bulb red onion
1 boiled egg, sliced
1 cup water
In a casserole, add one cup of water and boil. Blanch pako. Arrange on platter. Add tomatoes and red onion. Add also boiled egg and create design according to your taste. Use dressings: vinegar, sugar, ginger, pepper and salt to taste. Enjoy!
