Jackruit-Tapioca Pearl with Coco Milk

I am sure you are very familiar with this sweet preparation. It is quite similar to ginataang bilo-bilo, but, sweeter and eaten cold instead of in hot state. A simple recipe consisting of only few ingredients. It is best serve for merienda and dessert. It is so yummy and creamy! Try it at home!

Ingredients:

2 cups jackfruit, seedless, shredded
1/2 cup tapioca pearl
1 cup 2nd extract coco milk
2 cups 1st extract coco milk, kakang gata
1 1/2 cup sugar

Cooking Procedures:

In a casserole, boil the second extract coconut milk. Add tapioca pearl and cook until plump and tender. Stir it continuously for the cooking duration to avoid tapioca clumping. Add jackfruit and continue cooking for three minutes. Then add the first extract coco milk. Mix thoroughly until the sauce is thickened. Add sugar to suit your taste. Serve hot! Enjoy!

Ginataang Spinach Squash

Ingredients:

2 cups squash, sliced
2 cups spinach “uray” leaves
2 cups coco milk
1/2 cup dry dilis or daing na tuyo
1 bulb re onion, chopped
2 cloves garlic, minced
1 thumb size ginger, sliced
1 green chili
fish sauce to taste
cooking oil

Cooking Procedures:

Heat cooking oil in a pan. Saute garlic, onion and ginger. Add squash, green chili and dilis. Mix and cover the pan. Pour coco milk and season with fish sauce to taste. Add spinach leaves and cook for one minute. Serve hot.

Mango-Cucumber Dessert

Ingredients:

1/2 kilo mango ripe, cubes
2 pcs cucumber, cubes
1 can condensed milk
1 small can evap milk
1 tetra pack all purpose cream
1 sachet Mr. Gulaman (strawberry flavor)
6 cups water
sugar to taste

Procedures:

How to Prepare Gelatin Gulaman:

In a casserole, add six cups of water. Pour one sachet of Mr. Gulaman. Mix thoroughly. Boil for five minutes. Add sugar to taste and continue stirring. Pour into tray. Let it cool. Then, slice to cubes. Set aside.

Peel cucumber and remove seeds. Slice into cubes. In a mixing bowl, add ripe mango cucumber and gelatin. Pour condensed milk and all purpose cream. Mix thoroughly. Now, Cover the mixing bowl and refrigerate for at least an hour. Serve cold. Enjoy eating dessert!

The Alugbati Salad

Ingredients:

2 cups young alugbati leaves
2 tomatoes, cubes
1 salted egg, cubes
1 medium red onion, chopped
1 cup water

Sauce:
1 cup vinegar
2 cloves garlic, minced
ground pepper
salt and sugar to taste

Cooking Preparations:

In a casserole, boil water and add alugbati leaves. Continue boiling for three minutes. Drain. In a platter, arrange alugbati leaves, tomatoes and salted egg. Garnish with red onion. For dipping sauce. Mix vinegar, garlic, sugar and salt to taste.

Saute’ Squash -Tomato Sauce

My recipe today was very easy to prepare. I looked for vegetables in fridge. I saw this fruits and leaves of squash. I mixed them and put some sauce! I add also some condiments for a greater taste. Some of us, I think, will include a can of sardines instead because it is cheaper! I can’t do the same because my hubby is on diet.

Enjoy my new recipe. I am sure you can do it within few minutes….

Ingredients:

1/4 kilo squash, cubes
1 cup squash young leaves
1/2 cup tomato sauce
1/2 cup chicken meat, sliced
1 medium red onion, chopped
2 cloves garlic, minced
ground pepper
salt to taste
vegetable oil
1 cup water

Cooking Procedures:

Saute garlic and onion. Add chicken meat and cook until golden brown. Continue stirring. Add squash and water. Cover the pan. Boil until squash is tender. Add tomato sauce and season with ground pepper and salt to taste. Add the squash leaves. Cover the pan and turn off the fire. The remaining heat is enough to cook the recently added leaves. Serve hot!
